Bread Dipping Appetizer

Italian Bruschetta Traditional Style

Italian Bruschetta Recipe
Makes 4 servings

Authentic Italian bruschetta is made in an Italian kitchen and grilled over a wood fire. Most of us do not live in Tuscany, or use a wood burning stove or oven, so a stove top grill will work fine, as would a cast iron skillet with grill ridges or toaster oven.

Ingredients:

1 half loaf Italian sourdough bread, 
  (a French baguette loaf will work too)
4 garlic cloves peeled and pressed through a garlic press
½ cup extra virgin olive oil
Coarse sea salt
1 Red Ripe Tomato, diced
Black peppercorns fresh ground

Method

Cut the bread at an angle into ¾ inch thick slices. Grill the bread until it is brown on both sides. Remove the bread from the grill and spread pressed garlic on each of the bread slices. Place the bread on a serving platter and sprinkle with diced tomatoes, then drizzle with olive oil. Add a pinch of coarse Sea Salt and fresh ground pepper. Serve immediately. It’s best to offer additional olive oil and balsamic vinegar in a dipping dish on the side.

For a variation use roasted garlic cloves in place of fresh pressed garlic cloves.
